   Thank you so much! Sorry it took me so long to find this. I have only recently looked around here other than the forums. Speaking of which I added a photo of how the wire rack and handle system might be used in the Wolfgang Puck dessert insert that you told me about.

   I keep thinking the problem must be with the pressure cooker, since you are following all the instructions to the letter. Do you suppose the gasket needs to be replaced? You might not notice a difference when doing something like a stew or beans or steaming potatoes...things that don't require such precise timing & temperature for the finished product. But if the gasket is faulty, it could be allowing the temp to drop just enough to produce undercooked cheesecake.
